Recipe of the Month: The Best Banana Muffins
I’ve had a lot of banana muffins in my day. And none compare to this particular recipe, given to my mom from her friend about 20 years ago. They’re the perfect combo of sweet and spongy, they easily turn into a birthday cake if you add peanut butter frosting (my favourite!), and also makes a great loaf. Oh, and on the kid front, I have successfully made these dairy free (coconut yogurt instead of sour cream, vegan butter instead of margarine), reduced sugar (either cut the sugar in half or replace with maple syrup), and even snuck in some protein powder when my kids were being picky and wouldn’t eat meat without a major argument (thankfully, we have moved past this stage). You should be warned, however, that these are highly addictive…
The Best Banana Muffins
1 1/2c. flour
1 tsp baking powder
1 tsp baking soda
1/2c. white sugar
1/2c. brown sugar
3 tbsp butter
1/2c. sour cream
1 tsp vanilla
2 mashed bananas
Cream butter and sugars. Add egg & vanilla and mix until combined. Dump in your flour, baking powder, and baking soda and stir – your batter will be sort of dry and lumpy at this stage and that’s perfectly normal! Add in your sour cream and mashed bananas, and stir until combined. Pour into muffin pans prepared with paper liners, or a greased cake/bread loaf pan if you’re making cake.
Bake 20 minutes @ 350*F for muffins, 30 minutes for cake.
BONUS! Grandma’s peanut butter icing recipe!
2c. icing sugar
1/4c. room temperature butter
2tbsp peanut butter
Put butter and icing sugar into a bowl and mix until combined. Add in your peanut butter… by now your mixer should be mad at you for working so hard! Pour in some milk a little bit at a time until your icing forms the correct consistency. If you find it gets too runny, add in a little more icing sugar. Frost your icing over your cooled muffins or cake, and enjoy!
