Recipe of the Month: Chipotle Chicken Salad Sandwich


I started making this recipe months ago when I had leftover roast chicken sitting in my fridge, begging to be eaten.  But honestly, who even knows what to do with leftover roast chicken?! All I know is that reheating that thing makes for a dry, chewy experience – which isn’t exactly tasty.  Since I’m always on a quest to try and use up the leftovers without wasting (shoutout to the other frugal foodies!), this recipe was born out of my determination to enjoy leftover chicken without gagging.  Serve this on homemade bread and you’ve got yourself a great lunch!

Chipotle Chicken Salad Sandwich Recipe

For the sandwich:
1c. leftover roast chicken, ripped into pieces
1 really nice loaf of bread
1 package of goat cheese (or smoked cheddar, if you prefer)
1 tomato

For the dressing:
1/4c. mayonnaise
2 tbsp white vinegar
1 tsp mustard
1/4 tsp ground chipotle peppers (you can find this at most bulk food stores)
salt & pepper to taste
(optional) a pinch of sugar, if you need to balance out the tart

In a bowl, mix together the ingredients for the dressing and give it a taste.  If you like spicy, feel free to increase the ground chipotle seasoning to 1/3 tsp.  Add the chicken into the bowl and stir until coated.  On your yummy bread, spoon out the chicken on one side and top with a slice of tomato and some goat cheese.  Grill on a panini press for about 5-7 minutes until warm through and there’s those amazing grill marks.  Serve with a side salad to boost the health factor of your lunch.  Makes enough for two filling sandwiches.
